The lush greenness of summer is not over yet. There is still time to prep a perfect, healthy and extremely delicious herbal pesto out from almost nothing. So, here is the deal; do not mix too much of everything. The herbs need to balance each other out.
The recipe for this baby is a simple one:
A bit of lemon juice
A large handful of herbs
Blend it all until the pesto is completely mashed and much like a nicely made humus.
You can mix whatever herbs you like, although give it a bit of lemon juice to make it fresh. The herbs I used for this one are; Mint, yarrow, ramsons, spring onions, sage, thyme, goutweed and parsley.
We eat this pesto in burgers and as topping on dark rye bread. YUM!
